It all started with a craving....or three!


Being pregnant means that I have been bombarded with these insatiable cravings that will not subside until they have been fulfilled. Last night's dinner all started with a craving for Guacamole, Chicken and Bacon, thus resulting in “California Chicken Sandwiches”

I made these by grilling the chicken breasts on my griddler and then placing them between thickly sliced bread with mayonnaise, guacamole (recipe below), red onion, tomato, lettuce, Jack cheese and bacon. They tasted just as I had hoped they would!





Guacamole
3 Avocados
1 Lime, juiced
1 tsp Salt
½ cup Onion, diced
3 tbsp Cilantro, chopped
2 Roma Tomatoes, diced
1 tsp Garlic, minced
Cayenne pepper, to taste

-In a medium sized bowl, mash together the avocados, lime juice and salt. Mix in the onion, cilantro, tomatoes and garlic. Stir in cayenne pepper.

-Refrigerate 1 hour for best flavor.
